Pineapple Chicken Tenders

I found this recipe a few months ago online, and it is SO easy and so yummy. I made it while camping for our potluck at our family reunion and it was a hit there also. You can also cut the portions up and put them on skewers with the pineapple and serve as appetizers!

(I remembered to take a picture after we had eaten almost all of the food! So this is as good as it gets....Also, Brian wasn't home yet, so I just cooked it in the skillet in stead of the BBQ. And I only had pineapple chunks...not as cute as the rings look!)

Pineapple Chicken Tenders
1 cup pineapple juice
1/2 cup packed brown sugar
1/3 cup soy sauce
2 lbs chicken breast tenderloins (or breasts cut into strips)

In a small saucepan over medium heat, combine pineapple juice, brown sugar and soy sauce. Remove from heat just before the mixture comes to a boil. Place chicken tenders in a bowl and cover with marinade. Refrigerate at least 30 mins.

Preheat your grill to medium. Grill chicken tenders 5 mins per side, or until juices run clear. They will cook quickly do to size, and if over cooked, they won't be as delicious.

We also grill up some pineapple and serve with rice!

Tip: I buy the pineapple slices in a can and use the juice from the can (its just about a cup) Then I grill up the slices once the chicken is almost done! If you stock up on canned pineapple, then this is a SUPER easy last min recipe. Soy sauce and brown sugar are always in stock around here.
