Chicken Enchiladas

Here is a yummy chicken enchilada recipe that I like to make when I make my homemade fresh salsa. (Look under snack foods for fresh salsa recipe)


Chicken Enchiladas
3 – 4 boneless, skinless chicken breasts, cooked and shredded
shredded cheddar cheese
1 small bunch of green onions, chopped (optional)
1 small can diced green chilies
16 oz. sour cream
2 cans cream of chicken soup
1 dozen flour tortillas

Preheat oven to 350 degrees. Combine chicken and cheese in a bowl. Heat in a saucepan over medium high, sour cream, green onions, soups, and green chilies until well blended and smooth. Put a thin layer of sauce on bottom of a large casserole pan. Roll some of chicken mixture and a spoonful of sauce into each tortilla. Pour the remaining sauce over the enchiladas and top with extra grated cheese. Tastes great with fresh salsa.
