Macaroni Salad

Nothing like saving this post for the last minute--sorry :).


We were out of town a couple of weeks ago and my sister-in-law had this macaroni salad as side dish with BBQ'd chicken and corn on the cob--so yummy! She said it is also good as a main dish. Just add cubed chicken or shrimp and serve with some fluffy rolls.



Ingredients:

cooked macaroni (16 oz box)

cubed avocado

cubed cheddar cheese

sliced olives

sliced celery

cubed tomato

green onion (sliced in really small bits)

1 1/2 - 2 cups Best Foods Light mayo

1/2 cup evaporated milk

mustard

dill relish

salt

pepper

seasoning salt

Directions:

Thin out the mayo with the evaporated milk in a seperate bowl and add mustard and dill relish to mixture. Add the rest of the ingredients and add more milk if it seems to thick.

This recipe is, pretty much, to taste so add as much or as little of the ingredients that you want (the avocado was my favorite part!) Season to taste and enjoy!
