Chicken Enchiladas

Here is another chicken enchilada recipe (just so you have a variety :)!):

Ingredients:

1 T Butter
1/2 cup chopped green onions
1/2 t garlic powder
1 (4oz) can diced green chilis
1 (10.75oz) cream of mushroom
1/2 cup sour cream
1 1/2 cup cooked and shredded chicken breast
1 cup shredded cheddar cheese, divided
6 (12in) flour tortillas
1/4 cup milk


Directions:
1. Preheat oven to 350 degrees, lightly grease 9x13 baking dish
2. In a medium saucepan over medium heat, melt the butter and saute the green onion until tender (3-4 min)
3. Add the garlic powder to the green onions, then stir in the green chilis, cream of mush and sour cream. Mix well. Reserve 3/4 of sauce in another bowl and set aside.
4. To the remaining 1/4 of the sauce in the pan, add chicken and 1/2 cup of shredded cheese. Stir well.
5. Fill each flour tortilla with chicken mixture and roll up. Place seam side down in prepared baking dish,
6. Combine the reserved 3/4 of the sauce with the milk. Spoon the mixture over the rolled tortillas and top with reaming (1/2 cup) cheese. Bake in preheated oven for 30-35 minutes or until cheese is bubbly.


**Variations: This recipe doubles really well! It also tastes almost exactly the same if you don't have time to do the green onions. I will add a Tablespoon of minced onion instead.
