Mandarin Almond Salad

Whenever I make this salad, people always rave about it! The latest comment, it is to die for! It is so fresh and yummy! Don't toss with the dressing until right before serving so that your lettuce doesn't get soggy.

1/2 head red leaf lettuce
1/2 head romaine lettuce
1 cup celery, chopped
2 whole green onions, chopped
8 medium strawberries, sliced
11 ounce can mandarin oranges, drained

Dressing:
1/4 cup oil
1 tablespoon parsley
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons red wine vinegar
2 tablespoons sugar

Sugared Almonds:
3/4 cup sliced almonds, slightly broken up
1/4 cup sugar
1/2 teaspoon cinnamon sugar
Over medium-low heat on the stove, stir sugar and almonds constantly until browned. Watch closely so they don't burn. Right before removing from heat sprinkle in cinnamon sugar. Pour out onto a plate and let cool. When cooled break into little pieces for sprinkling on top of you salad!

This salad is so good. I can almost drink the dressing! The salad is refreshing. It would also be good with grilled chicken if you wanted to make it into a "meal". You won't have any leftovers if you take this to a potluck.
