Shredded Beef Tacos


OK this is really simple and Shane loves them.

Shredded Beef Tacos


3-5 lbs. favorite roast cut

1 jar of salsa or 2 cups favorite salsa ( I use medium but might want to try mild first)

Soft corn tortillas

Sides

Cheese
Diced onions
Lettuce
Guacamole
Diced tomatoes

Put Roast and salsa in crock pot on low for 5-7 hrs or until the meat starts to shred with a fork.
Shred the roast in the crock pot and mix the meat into the sauce. To make the taco shells, heat oil in a skillet; when it is hot add the corn tortilla and cook making sure to turn and cook the other side. When the tortilla is crisp put onto a paper towel and fold into a taco shell. It might take some practice with the first two...to try and not have the corn tortilla brake when you fold it. Once you have made enough shells then you can fill it with the meat mixture and add all the sides.

Tacos is one thing I never make at the house much anymore, Jared is not a big fan of the ground beef with the taco packet added. I could see him really liking this because it is more authentic-great recipe!

So I made this tonight for Jared and he was so excited to have a "real" taco. As I was frying up the rest of the shells and he was sitting down eating he said "once you try one of these you will never go back". The meat was so good!

Oh and buy extra tortillas. It took me a few tries to get the tacos so they were closed so shut so you could get stuff inside. Make sure you have some good tongs, and I actually used a spoon while frying it to hold the taco so it didn't go together...

I made it the other day as well. It was so easy and totally beats my taco bell brand seasoning packet!
