Chicken Caesar Pasta Salad


Well, since I skipped both salad and pasta month, I thought I'd do a combo one! We had this for dinner two nights ago. (yes, I know-you're all in shock that the Martin's had salad for dinner!) I love Salad from resturants, but never make it at home. My kids emptied thier bowls even! The last two ingredients we chopped up and left to the side, and Brian just added them to his.

Chicken Caesar Pasta Salad

3 cups cooked, shredded or cubed chicken
3 cups cooked penne pasta (I used spirals)
2 cups thinly sliced romaine lettuce
1 1/2 cup cherry or grape tomatoes (I just cut up normal tomatoes)
1/2 cup thinly sliced fresh basil (I cheated and used basil out of my spice cabinet)
1/3 cup creamy Caesar Dressing (or the recipe suggests Poppy Seed dressing is good also)
1/2 cup chopped Green onions
1 garlic clove minced

Combine, toss, add dressing, EAT.

(I cooked up some extra noodles and if my kids finished thier salad they got some plain noodles-which they love)
