This is totally stretching the pasta thing, but this a favorite meal at my house that EVERY one in the family loves!
2 chicken breasts
2 cubes chicken boullion or use chicken broth and eliminate water
1 Tbsp of instant minced onion
4 cups water
2-3 carrots finely sliced
1 stalk of celery, chopped
1-2 cups of noodles (I use the extra wide egg noodles)
salt
pepper
dash of season salt
mashed potatoes
Combine all ingredients except noodles in medium size pan. Simmer 15 mins. Remove chicken and cut into bite size pieces and then return back to broth. Add noodles. Simmer 10-12 minutes or until done. Add more water if needed. Serve over mashed potatoes!
