Candied Almond Salad

I know this is long over due for back in June for Salads, I'm sorry! Living in Arizona especially in the summertime i don't like to cook too much! It is way TOO HOT!! So here is a YUMMY salad. I haven't been able to take a picyure of it yet, but trust me...It is really yummy!

1 bag "spring mix" salad (or 3 cups of a lettuce mix i.e. spinach, butter, red leaf, green leaf)
1/4 cup candied almonds
1/4 cup craisins

To candy almonds:
Take some brown sugar, dash of salt, some cinnamon, and a little bit of vanilla, and melt in a saucepan on med low heat. make sure you stir constantly; it can burn fast! once the mixture melts add you slivered almonds and take off heat. stir together; it will clump together. let it cool on a cookie sheet then kinda un-clump it! :)

Mix together; add dressing right before serving!

Dressing:
1/4 cup golden balsamic vinegar
3/4 tsp. salt
1/4 tsp. pepper
1 TBSP Cranberry juice (from concentrate)
2 TBSP Sugar
1/4 cup olive oil
1/4 cup flax oil (or use canola oil if you don't have any flax oil)

This makes a lot of dressing, enough to double recipe.

Maybe this is a dumb question, but where do you buy flax oil? This looks so yummy!

do you have a Sprouts? That is where I get it. make sure it is found in the refrigerated section. It needs to be refrigerated at all times and use it quickly because it goes rancid faster than other oils. Barlean's is my favorite brand. You can probably find it at any other health food store or section in the grocery stroe.
