This is my moms favorite salad. Different then all of your "oriental salads". On the recipe they have down that you can use a can of chunk light chicken, but I have always grilled mine and then give part of the chicken to my kids for their dinner.
Dressing:
1/4 cup olive oil
3 Tbsp of sugar
2 Tbsp seasoned rice vinegar
1 Tbsp soy sauce
1 bag of coleslaw mix (shredded cabbage)
1/2 cup sliced almonds, roasted
4 ounces snow (chinese) pea pods cut diagonally in half
2 chicken breasts
chopped green onions
Make dressing put in fridge to chill.
In a skillet turn heat to about med and put your almonds in stirring occasionally until slightly browned, dump in bowl with rest of salad, in same pan melt about 1 Tbsp of margarine or butter and add your chicken, I will usually add some creole seasoning, or season salt and some worchestershire sauce and cook until done. Then shred and throw into bowl with salad. Sometimes I will have this salad for dinner and then lunch the next day so I only put dressing on and mix when I am eating it. Just put enough dressing until it looks like it is barely wet. Soo good!
